Gearing my website towards SEO is great and all and acheiving a top 30 ranking in Google would be nice. However, the company I work for is targeting a specific audience and if a very low percentage of this audience actually uses Google for their searches then the top 30 ranking isn't really all that successful. (I used Google just as an example)

So my question is are there any resources out there that breakdown the demographics of the users of particular search engines???

If we rank well in Google, what other SE's are we likely to rank well in???

Does it really matter?? - hits are hits.

I appreciate any feedback you guys can give me.

Here is the most recent report on the top internet sites.
http://www.comscore.com/press/release.asp?id=348

Note the top 4 search engines, the ones that will drive over 90% of your traffic:

Google
AOL
Yahoo
MSN

Keep in mind that as of October 2003, Google powers AOL & Yahoo

AOL & Yahoo use the G search results, and they provide nearly identical results. Before Christmas 2003, Yahoo will most likely switch to Inktomi.
